Cinco de Mayo Redux!

This year, for Cinco de Mayo, I decided to make pork carnitas, in addition to other Mexican themed cuisines for dinner with friends. A dear friend suggested a pretty straight forward pork carnita recipe, which turned out absolutely divine - filling the house with such wonderful fragrances and had flavors which melted in your mouth. Add to it the fact that this preparation is perfect for freezing and reheating, I stashed away a few servings just to defrost and serve over a bed of rice. Delightful!
